Easy Sausage, Egg and Cheese Breakfast Burritos

Cook Time 20 mins
Course Breakfast, Main Course
Servings 8 Servings

  • 1 lb Breakfast Sausage
  • 5-8 Eggs
  • 2 cups Shredded Cheese
  • Salt & Pepper

  • Start by gathering and preparing all of your ingredients and tools. This recipe moves quickly and it's much easier to make when you have everything ready to go!
  • Preheat your cast iron skillet on medium to medium-high heat. If your pan is seasoned well, you probably will not need to add any cooking oil before adding your meat. If your pan is newer, or if your sausage has low fat content, drizzle a little cooking oil in the pan.
  • When your pan has reached temperature, add your breakfast sausage and use a spoon or your stir chopper to brown the meat.
  • While the meat is cooking, crack 5-8 eggs in a bowl. Add salt and pepper to the eggs and whisk them with a fork.
  • Once the meat is cooked (it'll be a nice brown color...no pink!), add the eggs into the pan. Stir frequently to keep the eggs from sticking to the bottom of the pan.
  • When the eggs are cooked to your preferred doneness, remove the pan from heat and stir in the shredded cheese.
  • Spoon a small amount onto a tortilla and roll it into a burrito. Add any preferred toppings, serve and enjoy!

Optional toppings: sour cream, salsa, cilantro, hot sauce, green onions, fresh tomatoes & peppers
These burritos are also great to make ahead and freeze! I will do this with whatever leftovers we have. Make the burritos like normal. Once they have cooled, wrap them tightly in saran wrap to prevent freezer burn and place them in a freezer bag for storage. To reheat them after frozen: unwrap them from saran wrap, place a paper towel around them, microwave on high for 45-60 seconds, and enjoy!
