Easy Sausage, Egg & Cheese Breakfast Burritos
Sausage, egg & cheese breakfast burritos are a go-to meal in our home! These tasty burritos are easy to put together, hearty, and absolutely delicious. They are also kid-friendly and easy to make in less than 20 minutes. Served with our favorite salsa and a side of fruit, these burritos are perfect for an easy breakfast or dinner.
I feel like breakfast for dinner is often overlooked as an option for an evening meal. Breakfast for dinner is something that happens at least weekly in our home! Breakfast is easy to make and everyone in my home loves breakfast foods (even the picky eater). I’ve learned to always keep the ingredients on hand for a quick breakfast meal. It’s my go-to meal on busy church nights, when we get home from a long day of travel, after big grocery shopping days, or when plans change suddenly and I need to have dinner on the table soon. Breakfast is a winner!

Tools You May Need
- This cast iron skillet. EVERYTHING tastes better in a cast iron skillet. I love cooking in mine! This skillet is a good solid brand.
- This cast iron skillet is definitely a step up in quality and price. It’s much easier to clean and just so pretty!

- Meat chopper for cooking ground meat
Ways to modify this recipe
- Add potatoes to make this heartier! I love adding frozen sweet potatoes. After cooking your meat, add the frozen sweet potatoes to the pan. Cook them to tender. Then add the eggs and cheese as directed.
- Add fresh spinach at the end to give it some extra veggies!
- Serve with GF corn tortillas like a taco, or serve without a shell. It’s still yummy!
- Change up the cheese to change up the flavor. I typically use Colby Jack cheese, because that’s what we have on hand most of the time. But I’ve also used sharp cheddar, pepper jack cheese and even some goat cheese or feta cheese. Extra fancy!
- Play around with the seasoning on your eggs. Salt and pepper is wonderful, but sometimes it’s fun to get creative! Everything But The Bagel Seasoning is so good on these eggs.
- These burritos are also great to make ahead and freeze! I will do this with whatever leftovers we have. Make the burritos like normal. Once they have cooled, wrap them tightly in saran wrap to prevent freezer burn and place in a freezer bag for storage. To reheat them after frozen: unwrap them from saran wrap, place a paper towel around them, microwave on high for 45-60 seconds and enjoy!

- Fresh fruit! Blueberries, strawberries and bananas are go to’s for us.
- Fried potatoes, roasted potatoes or hashbrown patties.
- Fresh salsa & chips

- 1 pound of breakfast sausage
- 5-8 large eggs (farm fresh eggs are our favorite!)
- 2 cups of shredded cheese
- salt & pepper
- tortillas
- salsa (optional)
- additional toppings: sour cream, cilantro, hot sauce, green onions, fresh tomatoes & peppers
How to make Sausage, Egg & Cheese Burritos
Start by gathering and preparing all of your ingredients and tools. This recipe moves quickly and it’s much easier to make when you have everything ready to go! Preheat your cast iron skillet on medium to medium-high heat. If your pan is seasoned well, you probably will not need to add any cooking oil before adding your meat. If your pan is newer, or if your sausage has low-fat content, drizzle a little cooking oil in the pan.
When your pan has reached temperature, add your breakfast sausage and use a spoon or your stir chopper to brown the meat. While the meat is cooking, crack 5-8 eggs in a bowl. Add salt and pepper to the eggs and whisk them with a fork. Once the meat is cooked (it’ll be a nice brown color…no pink!), add the eggs into the pan. Stir frequently to keep the eggs from sticking to the bottom of the pan.
When the eggs are cooked to your preferred doneness, remove the pan from heat and stir in the shredded cheese. Spoon a small amount onto a tortilla and roll it into a burrito. Add any preferred toppings, serve and enjoy!
